Little Chef in the kitchen!?

It became cold outside and we wanted something soul-warming with tea such as pie! We already had apples and cranberries at home. I was thinking what cake to make and with what filling but received request for cranberry. So I decided to make a new cranberry cake. And just at the same time a new outfit from Japan arrived for Hina-chan. She immediately decided to try the outfit. ;)
That is why today in the menu we have:

"Upside-Down Cranberry Cake"

300 g fresh (or frozen) cranberries
1/3 cup granulated sugar
20 g unsalted butter

100 g unsalted butter (or margarine)
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla sugar
1 tsp. orange zest
1 cup buttermilk or kefir
1 1/2 cup cake flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt


Preheat an oven to 340°F (170°С).
Abundantly grease the bottom and walls of 8" (20 cm) solid baking pan with butter.
I have only 9" (22.5 cm) solid baking pan so that's why the cake ended up more flat.

Mix cranberries with sugar and pour to the bottom of baking pan.

Beat butter with sugar by using mixer. Add eggs one by one and mix at least for 2 minutes after each.

Add vanilla sugar...

...and orange zest.

Sift flour with baking powder, baking soda and salt.

Add flour mix to the egg-butter mix in 3 stages alternating with buttermilk or kefir.

Put the dough in baking pan on top of cranberries and put it to the oven to bake for about 45-50 minutes. Check for the readiness with a toothpick.

Slightly cool baked cake in the form and then turn upside-down on a serving plate.

It is recommended to serve warm with vanilla ice cream.

P.S. In our case the cranberries emerged and as a result the cake does not exactly look like upside-down cake ^^; But it did not affect the taste. The cake was delicious. Recommended. :)
