Hina Ichigo at the kitchen! Let's take a look and see what is she doing there!?

My husband came to me once and said "you will write about your cooking in our blog!". "What a surprise" I thought. How do I start? Because I know so many recipes! And then Hina Ichigo gave us an idea by saying "I helped to prepare cake not so long ago! Let's start with it!" ^^ So we agreed :)

Ah, for those who don't know who Hina-chan is, let me tell you in a few words. Hina Ichigo is one of the seven dolls from an anime Rozen Maiden, this is if we talk about the character. A limited edition dollfie Hina-chan got to us from Volks company. Originally released for Dollfie Party 18. And we are thankful to them!
Hina-chan loves strawberries a lot, and her name means just that. It means Baby Strawberry. Thet's why she can't resist the cake, which I wanted to do for a long time because I love strawberry very much too! In order to make it tastier, Hina-chan volunteered to help in cooking.
So today in the menu we have:

"White Chocolate Strawberry Mousse Cake"

For Sponge Cake we will need:

  • 6 eggs
  • 3/4 cup sugar
  • 1 tsp. vanilla sugar
  • 1 1/4 cups cake flour
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, melted

For Mousse we will need:

  • 400 g. white chocolate (finely chopped)
  • 450 ml. heavy cream
  • 9 g. unflavored gelatin
  • around 500 g. of strawberries

Preparation of the Sponge Cake:
We need to prepare Génoise Cake. This is pretty complicated task for Hina-chan taking in to account her size. So that's why I did this, she only were helping ;)
On a bain-marie(water bath) beat the eggs together with sugar for about 10 minutes until a thick light-yellow mass forms. Add vanilla sugar and sifted flour with salt. Carefully stir. Stir a few spoons of dough into the melted and chilled butter and then also carefully stir the mix into biscuit dough. If you pour all the butter at once, then biscuit dough will collapse immediately under its weight. But if you add a small amount of dough to the butter at a time, then you will make it to lift.
Preheat an oven to 320°F (165°C). Put the dough into 9" (23cm) parchment-lined form, and bake in the oven for 25-30 minutes. Check for the readiness with a toothpick. Cool the cake and then cut it into 2 pieces.

P.S. I can't say the sponge cake turned out very lifted :~ That is why I came to a conclusion that perhaps we need to put some more dough into the butter. I've put only 3 or 4 spoons. And probably I needed to pour even smaller portions of butter into the biscuit dough. There is still some room for practice. ;)

Preparation of the Mousse:
Melt chocolate on a bain-marie(water bath). Soak gelatin in a little bit of water for a few minutes. Put in a microwave and defrost for 1-2 minutes or until the mix starts to bubble (it happens in seconds). Heat the 100 ml of the cream and dissolve gelatin in it. Pour the hot cream onto chocolate and stir until smooth. Cool to the room temperature. Whip remaining cream until soft peaks form. In 3 attempts add whipped cream in the chocolate mass while stirring carefully.

Hina-chan tried to do her very best at stirring the mousse. Good girl! ^^

By this moment we already prepared some shortcake to assemble the cake, here's how! ;)

Assembling the cake:
Line 10" (25 cm) Spring-form with plastic wrap.
Cut the top and bottom crust from sponge cake and make sides even, so that there is 0.40" (1 cm) to the sides of the form.
Select the same sized strawberries and cut them in half (strawberry must be dry otherwise it might color the mousse).
Cut the remaining strawberries into thin slices and put half of them on top of shortcake.
Put the strawberry halves between shortcake and walls of the form.
At this stage Hina-chan climbed to the counter and happily waited for the completion of the cake assembly!
Put half of the chocolate mousse on top.
Cover with a second shortcake piece then put remaining strawberry slices and mousse again.

Put the cake in a fridge for at least 6 hours and it's ready to be served.
Don't freeze this cake (unlike other mousse cakes) to preserve strawberry freshness.

Our cake is finally ready! Please come to the table!

Hina-chan as the main helper of course gets the first piece! She deserved it and she was waiting for this cake!
