Juicy and delicious fish in 30 minutes!

There is a fish dish that is very popular in our family. First it is very delicious, second it is very simple and quick to prepare and third everybody who tries it wants to know the recipe ;) This recipe is not new and it is from Russian cooking magazine Gastronom (only in Russian). On my first review of this recipe I wasn't following directions very closely, so that's why I will specify my proportions of ingredients.
So, today in the menu we have:

Salmon with wasabi mayonnaise

Based on a recipe from Gastronom

Serves 4.

Ingredients:
4 center-cut skin-on salmon fillets, 9 to 10 ounces each (280-290 gram)
4 tsp. miso paste
4-5 Tbs. white and black sesame seeds

For serving:
4 Tbs. mayonnaise
2-3 tsp. wasabi paste from a tube
1 small lime cut into 4 pieces (optional)

Instructions:

1. Adjust oven rack to middle position and heat oven to 285°F (140°C).
2. Fry the sesame seeds on a dry and well-heated skillet about 1 minute.
3. Wash and then pat salmon dry with paper towels. On top of each fillet put 1 tsp. of miso paste and spread evenly across the top. Then sprinkle top of each fillet with fried sesame seeds and gently press it into the miso paste.
4. Spray a baking pan with cooking spray. Place salmon skin side down in the baking pan and bake for 13 minutes. Serve immediately.
(If each of your salmon fillet i
s less in weight and thinner I recommend you to reduce the baking time). The fish would be not raw and not dry but very tender and juicy.
5. Mix together mayonnaise and wasabi paste and serve with salmon.

Great recipe! Super easy and tasty. Because of a previous post - made sure to use use wild fresh salmon. I'm going to try it with dill next time.
