Juicy and delicious fish in 30 minutes!

There is a fish dish that is very popular in our family. First it is very delicious, second it is very simple and quick to prepare and third everybody who tries it wants to know the recipe ;) This recipe is not new and it is from Russian cooking magazine Gastronom (only in Russian). On my first review of this recipe I wasn't following directions very closely, so that's why I will specify my proportions of ingredients.
So, today in the menu we have:

Birds in Knoxville

I have been taking pictures of birds this spring from time to time with little time to process them. Finally I did some more pictures today and decided to process entire backlog.

We start with pictures from first half of February where a big flock of American Robins decided to land near our grocery store.

This is going to be large amount of bird pictures.

Universal Studios Florida

And our last full day in Orlando. We decided to visit Universal Studios park this time for a change.

But then it turned out that there are two parks nearby, the Universal Studios Park and Universal's Islands of Adventure. The latter one was mostly famous for it's roller coasters and such so I decided we better go to the Universal Studios park. There really was not enough time to see both esp. since both park were closing early at 6pm on that day.

Disney World: Disney's Hollywood Studios

So we had 3 days of meeting at LUG2011 and after that there still were a couple of days left to explore more of the Disney World and surrounding areas.

For Thursday we only had half a day since the conference concluded at noon and so we decided to visit Disney's Hollywood Studios park as yet another park that had a firework show at night.

Tradinional Russian Easter Dish.

Easter (in East Europe it's called Paskha) is the main Christian holiday in Eastern Europe which celebrates the Resurrection of Jesus Christ. Lent precedes the Easter and it's 40 days long, that's why there is usually a feast on the Easter in Eastern Europe. There are traditional Easter dishes too that have a deep symbolic meaning and they are different from traditional Easter dishes in the West. On the "Easter Sunday" painting by Russian artist Ilya Kaverznev you might feel an atmosphere of Russian Easter and see the traditional Easter dishes, such as - Easter Kulich, Easter eggs and Paskha. Also in the picture you can see pussy willow branches. Pussy willow in Eastern Europe became a replacement to palm branches which is a mandatory attribute of Palm Sunday and in Eastern Europe this holiday is called Pussy Willow Sunday ;)
And today I want to introduce you to a dish named after the holiday, this is Paskha dish. It just so happened that this dish is cooked only once a year for Easter. It's made from tvorog and is traditionally shaped as a pyramid with a cut off top. This shape is a result of using a special mold for this dish, which can be bought in Eastern Europe. But if you don't have such a mold (I don't have too) it doesn't mean that you can't cook this delicious sweet treat. So we will use what we have at home ;) The only thing that you need to find is the main ingredient of this dish that is called tvorog. Wikipedia says that the tvorog is a Quark cheese. I didn't try Quark cheese, so I don't know what's this, but we usually buy Farmer cheese and it tastes right.

Gatorland and Kennedy Space Center

On Monday work-related activities started for me and Ksusha decided to go see places with our friends. She returned with some pictures and it seems I also want to go there sometime later ;)

First stop was at Gatorland, a theme park and a wildlife preserve known for its wide variety of alligator and crocodile species.

Aside from crocodiles they also had a lot of wild birds too.


Disney World: Magic Kingdom

So it came time for the next day in Florida, the plan was to visit Disney Magic Kingdom park.

It did not work to go there early because we needed to switch hotels and also meet some friends to go to the park together.

Disney World: Epcot

On Saturday we woke up early and headed to the Epcot park. It promised to be a big one with interesting attractions like a time machine, some fast cars and so on. Also it featured 11 real tiny countries that Ksusha was interested to see. Also promised was night-time fireworks show.

So we departed from our hotel at around 9am and arrived to the park at about 9:15. Parking cost is $14 for the whole day and you can enter multiple times too. I was really impressed by the parking organization too, no need to hunt for a free spot, parking attendants direct you towards where you need to park, as soon as one lot fills it is closed and another one immediately opened.

Visit to Orlando, Florida

As luck had it, last week there was a LUG2011 in Orlando, FL and I was on the list of people to visit it. The other cool thing about Orlando is it is home to the world's biggest Disney themed park set named Disney World and I guess this one is much more interesting for everybody ;)

Anyway we decided to arrive a few days early so that we actually have time to check the Disney parks.
